Dill Zucchini Fritters

I took my inspiration for this dish from a Persian recipe I once saw called “Kuku,” which is basically a zucchini fritter flavored with chopped mint and served with yogurt. I had some dill and feta cheese on hand, so I decided to try making my own zucchini fritter and serving my favorite garlic yogurt sauce on the side!

Dill Zucchini Fritters

These fritters are packed with tons of zucchini goodness! Fresh dill enhances the fresh feel of these fritters and the feta cheese gives it some tang.

Ingredients

  • 2 lb Zucchinis, shredded (~ 4 medium zucchinis)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Garlic powder
  • 5 Tbsp Dill, Chopped
  • 1/3 cup All purpose flour
  • 2 Eggs
  • Heaping 1/4 cup Feta cheese, crumbled
  • 3/4 cup Vegetable oil, or more, for frying

Yogurt Sauce:

  • 1 cup Greek yogurt
  • 1/4 tsp Garlic powder
  • 1/4 tsp Black pepper
  • 1/8 tsp Salt, or to taste
  • 1 Tbsp Dill, chopped

Step by Step Instructions

Step 1

Line a colander with a cotton kitchen towel. Shred the zucchini and put it in the lined colander

Step 2

Add 1/2 tsp salt to the shredded zucchini and mix well. Place the colander inside of another bowl to catch the water that will drain from the zucchini

Step 3

Leave the zucchini to sit for at least 30 minutes – up to an hour and a half

Step 4

Gather the kitchen towel by the corners, making a sack with the zucchini inside. Over the sink, squeeze the sack of zucchini until most of the water has run out. Squeeze it until the water stops pouring down your hand

Step 5

Pour the shredded zucchini into a big bowl and mix in the spices, dill, flour, and eggs. Finally add the feta cheese

Step 6

Pour 3/4 cup of vegetable oil into a large skillet and heat on medium high until the oil is piping hot (about 7 minutes). You can try adding a small spoonful of zucchini mix to the oil to test if it is hot enough. The zucchini should make a sputtering sound immediately as it hits the oil

Step 7

When the oil is hot, add 1/4 cup spoonfuls of the zucchini mixture and cook for about 3 minutes on each side, or until they are golden brown

Step 8

Mix yogurt ingredients together

Step 9

Serve the fritters hot or cold with a generous dollop of yogurt sauce on top!
